One such traditional sweet that graces every Indian household during Diwali is the Besan Ladoo (Odia: ବେସନ ଲଡ଼ୁ). These melt-in-your-mouth delights, made from gram flour (besan), ghee, and sugar, are not only delicious but also hold a special place in our festive celebrations. Here's a step-by-step guide to making perfect Besan Ladoos this Diwali 2024.
Ingredients:
- 2 cups of Besan (gram flour)
- 1 cup of Ghee (clarified butter)
- 1 cup of Powdered Sugar
- 1/4 cup of Semolina (rava/suji) – optional for added texture
- 1/4 cup of Chopped Nuts (almonds, cashews, pistachios)
- 1 tsp of Cardamom Powder
- A pinch of Saffron strands (optional)
- Edible Silver Leaf (for garnishing, optional)
Besan Ladoo recipe in the step-by-step format:
1. Roasting the Besan:
- Heat a heavy-bottomed pan on medium flame. Add the ghee and let it melt completely.
- Once the ghee is hot, add the besan and semolina. Stir continuously to avoid lumps and ensure even roasting.
- The key to perfect Besan Ladoo is patience. Roast the besan on low to medium flame, stirring continuously until it turns golden brown and aromatic. This process might take about 20-25 minutes.
- The mixture will start to release ghee and become glossy. At this stage, add the chopped nuts and continue to roast for another 5 minutes.
2. Adding Sweetness:
- Remove the roasted besan mixture from heat and let it cool slightly.
- Add the powdered sugar, cardamom powder, and saffron strands (if using) to the warm mixture. Mix thoroughly until the sugar is well incorporated and the mixture is smooth.
3. Shaping the Ladoos:
- Allow the mixture to cool enough to handle. Take small portions of the mixture and shape them into round balls using your palms.
- If the mixture is too dry and difficult to bind, add a little melted ghee and mix well.
4. Garnishing:
- Place the ladoos on a plate and garnish them with edible silver leaf or additional chopped nuts if desired.
- Let the Besan Ladoos set for a few hours at room temperature before storing them in an airtight container.
Tips for Perfect Besan Ladoos:
- Ensure that you roast the besan on low to medium flame to avoid burning and achieve the perfect color and texture.
- Adding semolina to the mixture gives a slightly grainy texture to the ladoos, which many people enjoy.
- If you prefer softer ladoos, skip the semolina and use only besan.
- Adjust the sugar quantity to suit your taste. You can add more or less as per your preference.
